Beef & Lentil Chili

SERVINGS : 4 servings

INGREDIENTS

  • 1 tbsp. oil

  • 8 oz. ground beef

  • 2 cloves garlic, finely chopped

  • 1 jalapeno, finely chopped

  • 1 tsp. chili powder

  • 1 tsp. ground cumin

  • kosher salt

  • black pepper

  • 1 tbsp. tomato paste

  • 1 28-oz. can crushed tomatoes

  • 1 15-oz. can dark red kidney beans, rinsed

  • 1 15-oz. can lentils, rinsed

  • Low fat sour cream, for serving

  • Grated cheese, for serving

INSTRUCTIONS

1.    Heat the oil in a large saucepan over medium heat. Add the beef and cook, breaking it up with a spoon until brown.

2.    Add a 28-oz can crushed tomatoes and simmer gently for 10 minutes. Five minutes before serving, the kidney beans and lentils. Serve with sour cream and grated cheese, if desired.
