Barbecue Chicken Lettuce Cups

INGREDIENTS

  • 1 tablespoon olive oil

  • 1 lb boneless skinless chicken breast cut into very small ⅓ inch cubes

  • 8 romaine lettuce leaves

  • 1/3 cup barbecue sauce

  • 1/4 red onion sliced very thin

  • Cilantro leaves

INSTRUCTIONS

1. Cook chicken- Heat olive oil over medium heat in a frying pan. Add the chicken and cook for 5 or so minutes, until no longer pink.

 

2. Combine- Toss the chicken in barbecue sauce.

 

3. Serve- Spoon chicken into the romaine leaves, sprinkling with red onion and cilantro leaves.

NOTES

- Swap for 1lb of ground chicken, pork, beef or turkey; adjust cook time as needed

- You can use butter, romaine, or iceberg lettuce for lettuce wraps

- Use your favorite brand! Sweet Baby Ray's is a great choice.
