VEGAN COOKING

WHY GO VEGAN?

A substantial portion of the world’s population eats a mostly plant-based diet. Throughout history, it was generally impossible for most people to eat a diet heavily based on animal products. Refrigeration didn’t exist, so meat spoiled rapidly when transported or stored. Hence, vegan was actually the norm!

Vegan diets exclude all foods produced by or derived from animals: meat, fish, dairy products, eggs, and honey. You can define veganism as a diet based entirely on plants.

Many vegans remove animal products from their entire lifestyle. They’ll avoid products made of wool, leather or buy cosmetics tested on animals or made from animal ingredients.

The idea of going vegan might seem difficult, but the vegan diet today is far more diverse and delicious than it ever has been. As you explore a vegan diet, you’ll soon be overwhelmed by all the delicious possibilities!

If you have a taste for quality meals, you can eat exceptionally well on a budget! Fruits & vegetables cost less than pricey meats and come in a practically limitless variety. New foods are coming to market all the time. As long as it’s from a plant, it’s fair game. That means a vegan diet lets you eat every sort of food made from vegetables, fruits, grains, beans, nuts, and seeds.

VEGAN SHOPPING

One of the best parts of doing your own cooking is that you gain absolute control over what goes into your food. Great meals start with great ingredients.

The quality of your vegan cooking will depend on the quality of the ingredients you purchase. So developing your food shopping skills is a big part of learning how to cook vegan.

In order to obtain the freshest and highest-quality fruits and vegetables, seek out your local farmers market. There are tens of thousands of farmers’ markets around the world, and more than 8000 in the United States alone. Here’s the USDA directory for United States farmers’ markets.

Natural food stores are another good option. They carry way more vegan foods than supermarkets.

The bulk section of your natural food store can save you money. Rice, beans, nuts, and breakfast cereal cost considerably less when purchased in bulk. You will also find great prices on fancier bulk items like coffee, seaweed, chocolate, and a wide assortment of spices.

Natural food store deli's offer the easiest way to try an assortment of delicious vegan foods, without having to do any cooking. Try making the items you like best at home. These foods are usually quick and easy to prepare, and cost a fraction of what they do at the deli.

Prices on frozen foods are usually high. Frozen vegan pizzas and TV dinners can cost triple what you’d pay at supermarkets.
